Allies Wines Merricks Pinot Noir is grown in a thin layer of alluvial soil, washed down from an eroded mountain peak over many years and planted to vines in the 1980s.
The Merricks vineyard is influenced by cold south-westerly winds in spring, yet sheltered from inclement weather by spurs coming off the Mornington Peninsula's large volcanic ridge. The result is a small crop of tiny bunches.
The grapes are rigorously sorted in both the vineyard and winery. Following a period of cold soaking, they are warm fermented with natural yeasts. The juice remains on skins until the tannins are supple.
Nothing is added unless absolutely necessary. There are no stems, no added yeasts, and malolactic fermentation occurs naturally. At bottling there is no fining or filtration.
Pale crimson, Allies Wines Merricks Pinot Noir has rich red fruit flavours, fine tannins and refreshing acidity. Cellaring potential is five years.
